Two-Tomato Tart with Gruyère AOP
Pick up a store-bought pie crust and put together this colourful, tasty pie in no time!

Ingredients
Serves 4 portions1 | pie crust or ready-rolled shortcrust pastry |
100 g | Le Gruyère AOP, grated |
Slices | Le Gruyère AOP to garnish |
30 ml | breadcrumbs |
3 | Italian tomatoes, sliced |
2 | clusters of cherry tomatoes |
Sprigs | of thyme |
Olive oil to drizzle |
Preparation

- Preheat oven to 400˚F (200˚C). Line a tart dish with a pie crust or ready-rolled shortcrust pastry.
- Prick the base with a fork. Scatter the grated Le Gruyère AOP and then the breadcrumbs over the base.
- Cover with 3 sliced Italian tomatoes first, and then the 2 clusters of cherry tomatoes.
- Garnish with sprigs of thyme. Season and drizzle with olive oil.
- Bake for 20 minutes. Leave the tart to cool on a cooling rack.
- Top with sliced Le Gruyère AOP.
